Holy Brunch Baked Plum Pudding

Time: 1 hour

It is Sunday and my family is sleeping in – and I have ripe plums to use up… This is a super delicious and healthy breakfast, brunch or dessert. It has the right amount of anise flavouring to make this an absolutely divine dish. I paired it with this music, as it is Sunday and because it seemed so timely with the situation of so many, needing hope and kindness when times are tough for many. Music Selection: Justin Bieber (featuring Chance the Rapper) – Holy

Ingredients:

Butter for baking dish

¾ c sugar

8 plums, washed and cut into small wedges

3 eggs

1 ½ cups heavy cream

2 Tbsp sambuca or another liqueur with anise or licorice flavoring

2 tsp vanilla

½ c flour

1/8 tsp salt

Optional Topping:

2 Tbsp sugar

1 tsp vanilla

Dash cloves

Directions:

Preheat oven to 400 deg.

Brush 2 quart casserole dish with butter.

Sprinkle the bottom of the dish lightly with a little extra sugar. Layer plums in dish.

In a processor, beat the eggs and sugar.

Then add cream, liqueur, vanilla, flour and salt. Beat until well mixed. Pour over plums. Let sit for a few minutes.

In small bowl, mix toppings.

Place in oven and bake for 15 minutes. Without opening oven, turn heat down to 350 deg and continue to bake for another 25- 30 minutes, until custard is golden. Let cool, then dust with sugar or the topping.
