Crispy Oven Baked Broccoli & Mushrooms

When we have company for dinner, my husband usually fusses over the perfect meat recipe and I fuss over the appetizers/desserts. That leaves the “middle” items or side dishes – salad, vegetables, potatoes/rice/pasta… Often these dishes do not get all the praise that the meat and dessert get. However, these little crispy veggies are easy to make and delicious. They also do make a good appetizer! I think you will like them and you will make them again and again!

Time: 30 minutes

Music Selection: Zedd – the Middle

Ingredients:

1 small head broccoli, cut into bite size pieces

20 medium mushrooms

1 ½ cup panko bread crumbs

1 oz parmesan cheese, grated

1 tsp garlic powder

1 Tbsp dried parsley

1 tsp smoked paprika

Salt/pepper

2 egg whites

Directions:

Preheat oven to 450 deg. Line a baking sheet with parchment paper.

Wash mushrooms and broccoli well. Let dry on paper towel for about 10 minutes.

In bowl, whisk the egg whites.

In large ziplock bag or bowl, mix the bread crumbs, cheese, garlic powder, parsley and paprika. You can lightly salt/pepper, too.

One by one, dip each mushroom and broccoli piece well in the egg, then coat with the bread crumb mix. Place each on the parchment paper, spread out.

Bake for 15 – 20 minutes, until crispy. You can flip them at about the 10 minute mark.

Serve with ranch dressing, helluv a good dip or a blue cheese dressing. Enjoy.
