Red Cabbage Slaw

Time: 15 minutes

This is a super fast, super healthy and super delicious side dish for schnitzel, but it also is a great topper for pulled pork sandwiches – it is so fast to make you will have time to yourself – maybe to daydream?

Music Selection: Monkees – Day Dream Believer

Ingredients:

½ head red cabbage, finely sliced or shred

1 medium carrot, peeled and grated

2 green onions

4 Tbsp white wine vinegar

3 Tbsp olive oil

 1 ½ Tbsp Dijon mustard

1 tsp sugar

Salt/pepper

Directions:

Mix cabbage, carrot and onions.

In small bowl, mix remaining ingredients. Just before serving, toss dressing on the slaw. Serve immediately as a side dish to schnitzel or as a topping on pulled pork sandwiches!
