Ingredients:
2 shallots, diced finely
2 Tbsp butter
1 1/2 cups fine ground corneal
1 cup riced cauliflower
5 cups chicken or beef stock
Salt/pepper
1 cup heavy cream (you may need more depending on how creamy you like it)
2 cups grated cheddar
Directions
In large pot, melt butter and saute the shallot and cauliflower.
Add in stock and salt/pepper. When the water starts to boil, turn the temperature to medium and slowly whisk in the grits and keep whisking until it starts to thicken. As it thickens, it should take about 10 minutes, add in the cream. Keep mixing.
Add in the cheddar. Mix well. Salt/pepper to taste.
Serve this with Red Wine Lamb Shanks.
