This is a dessert that is pure comfort — for those days when you want a big cup of tea and feel self-reflective… it also is the exact perfect dessert to share with best buddies…
Ingredients:
8 cups frozen or fresh berries
½ tsp salt
3 Tbsp cornstarch
1/2 cup sugar
1 1/3 cup flour
2 tsp sugar
1 tsp baking powder
½ tsp baking soda
½ tsp cardamom
1 cup milk
Directions:
Preheat oven to 400 degrees.
In 4 quart casserole dish, stir together berries, salt, cornstarch and ½ cup sugar. Place in oven and let heat while you mix the topping.
In large bowl, mix flour, 2 tsp sugar, baking powder, baking soda, cardamom and milk. Mix well.
Remove fruit from oven. Spoon drop the dough into 8 biscuits on top of the fruit. You can also lightly sprinkle a little sugar on each biscuit.
Put back in oven and bake until biscuits are brown and fruit is bubbling – about 30 – 35 minutes. Allow cobbler to cool for 5 – 10 minutes, then serve with whipping cream or vanilla ice cream!
