Ingredients:
3 large cod fillets, cut in 1/2
2 eggs, beaten
3 cups of garlic and herb flavoured croutons, crushed
¼ cup parmesan cheese
Salt / pepper
1 tsp garlic powder
1 Tbsp dried parsley
Tartar sauce:
2 Tbsp mayonnaise
2 Tbsp sour cream
2 tsp relish
½ tsp lemon juice
½ tsp smoked paprika
Optional: 1 tsp capers
Directions:
Preheat oven to 400 degrees.
In mixer, blend the croutons. In large flat bowl, mix croutons, parmesan cheese, salt, pepper, garlic powder and parsley. Set aside.
Beat eggs in another shallow bowl and set aside.
Line a baking sheet with foil.
Take each piece of fish, and dip all of it in the eggs, then roll in the bread crumbs and place on baking sheet.
Bake for 12 minutes. Remove from oven.
In meantime, mix mayonnaise, sour cream, relish, lemon juice and paprika (and capers). Set aside.
Serve fish with tartar sauce and wedges of lemon!
