Fruit Coulis

This is such a delicious way to make a fruit syrup for desserts or pancakes. You can add the amount of sugar you like and use whatever fruit you have on hand, but it is a great way to use up ripe berries!

Time: 20 minutes

Music Selection: There She Goes – Six Pence

Ingredients:

4 cups frozen or fresh ripe berries (strawberries, blueberries, blackberries, raspberries, cherries)

¼ cup water

¼ cup sugar

Optional: 2 Tbsp chia seeds or 1 Tbsp cornstarch mixed in 3 Tbsp water

Directions:

In sauce pan, heat up the fruit, water and sugar. Bring to boil and then let simmer until fruit is very soft. Add water if needed, but it should be quite runny. If you want to thicken to more a syrup, then add in some chia seeds or mix cornstarch with water, and whisk into hot fruit. Enjoy with lemon ricotta pancakes!
