Time: 30 minutes
These pancakes are soooooo delicious and fluffy. When you stack them up, they remind me of a drum, hence the pairing with the Little Drummer Boy (and besides it is now wintery and reminding me that Christmas is nearing).
Music Selection: For King & Country – Little Drummer Boy

Ingredients:
1 ½ cups flour
1 tsp baking soda
½ tsp salt
1 cup milk
1 tsp lemon juice
2 Tbsp lemon zest
2 eggs
2 Tbsp sugar
½ cup ricotta cheese
Optional: 1 cup blueberries
Butter for pan
Directions:
In large bowl, mix flour, baking soda, sugar and salt well.
Mix in the ricotta until broken down and coated with the flour.
Separate the eggs. Beat the whites until soft peaks.
In separate bowl, mix the milk, lemon juice, lemon zest, and egg yolks.
Combine the wet and dry ingredients (not the egg whites yet), mixing well. Once blended, slowly fold in the egg whites until well mixed. (add in blueberries at this point).
In large frying pan, melt some butter. Scoop about ¼ cup of batter and on medium heat, let fry until you see little holes forming. Flip. This should make about 12 pancakes.
Serve with syrup or fruit coulis.
