Taco Stuffed Red Pepper

Time: 1 hour

Fall on me with all your light – this recipe will lift your spirit and fill you up. It is flavorful, easy to make and delicious, as well, as healthy. Enjoy!

4 bell peppers

1 lb ground beef or turkey

2 cup cooked rice (cooled)

1 small onion, diced

3 cloves garlic, minced

1 cup enchilada sauce

3 tsp taco seasoning (or use ½ tsp cumin, 1 tsp garlic, 2 tsp chili powder)

1 – 2 tsp chili powder (to taste)


2 cups grated cheddar cheese

Toppings: sour cream, salsa, diced tomato, shred lettuce, cilantro


Preheat oven to 375 deg.

In large sauce pan, fry the beef, onion and garlic. Add the taco seasoning, chili powder, salt/pepper and enchilada sauce. Heat until thick. Set aside.

In meantime, wash and cut tops off red pepper.  Cut in half lengthwise and remove all seeds. Place on large, foil lined baking sheet.

Add rice to meat mixture. Scoop 1/8 of mixture in each bell pepper half. Sprinkle cheese on top and bake in oven for 30-35 minutes.

Top with sour cream, salsa, tomato, lettuce and fresh cilantro.
