BBQ Leg of Lamb

Time: 4 hours to marinade; 2 hours to BBQ

“Perpetual Bliss” – is a fitting phrase for this super flavorful, healthy and simple recipe for leg of lamb. It is a whole lot of marinating and slow roasting… relax and enjoy!

Ingredients:

1 – 4 ½ – 5 lb boneless leg of lamb

½ cup olive oil

Juice from 2 lemons

4 garlic cloves

1 Tbsp dried oregano

3 – 4 sprigs of rosemary

Salt/pepper

Directions:

In a large zip-lock bag, mix all the ingredients without lamb. Then add in lamb and let marinade for 4 hours.

Heat BBQ/smoker (just use charcoal for light smoker flavour) to 300 degrees. Remove lamb from marinade. Place in BBQ or smoker and cook for about 2 hours, monitoring the heat to keep it close to 300 degrees.

When lamb is about 125 degrees internally, it is done. Remove from BBQ/smoker and cover with foil to let rest for 15 minutes. Slice and serve with minced mint or a sweet heat bbq sauce.
