Roasted Cauliflower

Time: 1 hour

Today is the perfect day to Rise Up and conquer the world and this delicious, healthy and savoury recipe which may just make it on to your favourite list! It is easy to make and has few ingredients – a perfect side dish!
Music Selection: Andra Day – Rise Up

1 onion, peeled and cut into 8 – 10 wedges
1 small head cauliflower
4 cloves garlic
a dozen sprigs of thyme
1/4 – ½ cup parmesan cheese (optional)
2 – 3 Tbsp Olive oil

Preheat oven to 425 degrees.
Line a baking sheet with foil.
Cut up the cauliflower into large pieces and slice them in half so they have a flat side. Place cauliflower, garlic, onion and thyme in a large bowl. Add olive oil and salt/pepper. Toss the vegetables.

Place the vegetables on the baking sheet with the cauliflower flat sides down. Bake in oven for 20 – 25 minutes (the bottoms should be very brown). Remove from the oven and flip the cauliflower pieces.

Sprinkle on the grated parmesan cheese and bake another 5 – 10 minutes. Remove from oven. Discard the thyme and garlic. Enjoy!
