Breakfast Pizza Eggs

Time: 20 minutes

What do I love about this recipe? They are individual sized, easy to make, healthy, fast, AND a great breakfast option where everyone can make it their own way! Yes, I LOVE this recipe…. I hope you do, too.

Music Selection: Celeste – Hear My Voice

Ingredients (Per Person):

2 eggs

2 Tbsp pizza sauce (or 2 Tbsp tomato sauce with ¼ tsp Italian seasoning)

¼ cup grated mozzarella cheese

2 Tbsp grated parmesan cheese

Toppings: pepperoni, ham, Italian sausage, bacon, mushrooms, black olives, red pepper, green onion, fresh tomato

Directions:

Preheat oven to 400 degrees.

In oven proof ramekin, spread the pizza sauce.

Cover it with the grated cheese.

Place toppings that you like in a layer (except keep fresh tomato and green onion for after it is baked).

Break two eggs on top and salt/pepper.

Sprinkle the parmesan cheese on top.

Bake in oven for 12 – 15 minutes, until eggs are cooked to your liking. Top with green onion and/or fresh tomato.
