Creamy Cajun Shrimp Pasta

Time: 25 minutes

Better Days include making this amazingly fast and tasty pasta dish. It is a great entree or a side dish to steak or chicken. Make this day your “better day”.

Ingredients:

1 lb fresh or cooked shrimp

3 Tbsp cajun seasoning

1 medium shallot

3 Tbsp butter

3 Tbsp flour

2 cups chicken broth

2 cups heavy cream

Salt/pepper

2 cups fresh spinach

1 cup grated fresh parmesan

Extra parmesan for garnish

Zest from one lemon

1 tsp dried chili flakes

1 lb pasta (we like spaghetti or linguine)

Garnish: fresh parsley

Directions:

In large pot, filled with water and some salt, bring water to boil and cook pasta according to the directions.

In a bowl, mix the shrimp and cajun seasoning (if the shrimp are not cooked, then saute them in some butter). Set aside.

In large sauce pan, add the butter. Finely dice the shallot and saute in the butter until soft.

Add in the flour and mix to a roux. Add in the chicken broth and whisk until smooth. Let simmer until it reduces to half. Add in the lemon zest, cream and chili flakes. Add in the fresh spinach. Salt/pepper. Heat on low and whisk until it starts to thicken.

Whisk in the parmesan cheese.

Drain the pasta and put in large bowl. Pour over the sauce and add the shrimp. Toss until well mixed.

Serve immediately and garnish with extra parmesan and fresh parsley.
