Goat Cheese Mushy Peas

Time: 30 minutes

In the wee small hours of the morning, when hungry, try these peas – healthy, delicious, and filling!

Ingredients:

2 Tbsp butter

2 cloves garlic, minced

5 cups frozen green peas

1 cup water or chicken broth

1 chicken bouillon cube or 1 Tbsp chicken bouillon

Salt/pepper

¼ cup crumbled goat cheese

2 Tbsp sour cream or heavy cream

Optional: 1 Tbsp dried dill

Directions:

In large skillet, melt butter and saute garlic.

Add the peas and saute for 2 minutes. Add the water/chicken broth. Bring to boil.

Add in the bouillon and mix well. Simmer until most of the liquid is gone and peas are getting soft (about 15 – 20 minutes). Use a masher to mash some of the peas (not all as you want texture).

Add in the goat cheese while there is still some moisture and mix well. Add dill and sour cream. Mix well to heat and serve.
