Beef Tater-Totchos

Time: 35 minutes

Hay Amores – there are loves… then there are totchos… great for tailgate parties, BBQs, and Friday nights!

Music Selection: Shakira – Hay Amores

Ingredients:

Cooking spray

1 – 800 g bag frozen tater tots

1 Tbsp olive oil

1 lb ground beef

1 pkg taco seasoning (3 Tbsp seasoning)

1 cup chopped tomato

1 cup black beans (cooked)

3 cups shredded cheddar cheese or tex mex cheese

1 green onion, diced finely

Toppings: jalapenos, green onion, sour cream, guacamole, salsa, fresh cilantro

Directions:

Preheat oven to 450 degrees.

Spray a 9 x 13 baking dish. Add tater tots and bake until they are crispy – about 25 minutes.

In meantime, in large skillet, heat oil and fry the beef until cooked. Add in the taco seasoning and mix well. Cook until there is no liquid.

Remove tots from oven and sprinkle 1 cup of cheese evenly over it.

Top it with the ground beef. Sprinkle another cup of cheese on top.

Top it with beans. Sprinkle remaining cheese on top.

Put back in oven for 5 – 7 minutes, until the cheese is melted.

Top with tomatoes and green onion. Serve and let everyone add their extra toppings!
