PB&J Muffins

Time: 40 minutes

In our house, these muffins bring back nostalgic memories – cool mornings, warm muffins, kids getting ready for school… leaving us all “feeling good”.

Music Selection: Avicii – Feeling Good

Ingredients:

2 cups flour

1 ½ tsp salt

1 Tbsp baking powder

1 cup milk

2 eggs

2/3 cup sugar

1 cup peanut butter

1/3 cup melted butter

½ cup strawberry or raspberry jam

½ cup chopped peanuts

Directions:
Heat oven to 375 deg.

Line muffin tins with paper liners.

Stir together melted butter, peanut butter, and sugar until creamy. Add in eggs and milk. Stir well.

In separate bowl, mix baking powder, salt and flour.

Mix in the dry ingredients into the wet ingredients.

With a tablespoon, fill one muffin liner about 2/3 and press a small indentation in the middle. Spoon ½ tsp into the indentation. Then take more peanut butter dough and cover the jam to make a seam. Then proceed one muffin at a time. You should have enough to make 12 muffins. Sprinkle the chopped peanuts on top of each muffin.

Bake in oven 18 – 20 minutes. Enjoy!
