Pavlova

Time: 4 – 5 hours

Light and airy dessert and light and airy music… this dessert takes time, but is so simple to make and delicious… even healthy

Ingredients:

6 egg whites

1 Tbs cornstarch

1 cup icing (confectioners) sugar

2 tsp vanilla

1 tsp white wine vinegar

1 cup raspberry or strawberry jam

¼ Grand Marnier

1 ½ cups whipping cream

2 Tbsp sugar

1 tsp vanilla

3 cups chopped up mixed fresh fruit

Directions:

Preheat oven to 250 degrees.

Take a parchment paper, and trace a 9 inch circle. Place parchment on a baking sheet.

In a bowl, place the egg whites. With an electric mixer, beat the egg whites on medium until well combined. Sift in the cornstarch and beat until the eggs start to get foamy. Turn up the speed of the beater to high and very slowly add in the sugar, beating until stiff, foamy peaks. Add in the vanilla and white wine vinegar. Beat about another 1 minutes.

Using a spoon, place the meringue on the parchment paper, within the circle outline. Try to keep the meringue even. Place in oven and late bake for 1 ½ hours. Leave in the oven to cool (will take another 2 hours). It should be quite dry.

In the meantime, take the jam and mix in 1 tablespoon of the Grand Marnier.

In a new bowl, add the whipping cream, vanilla and 2 Tbsp sugar. Beat until stiff peaks.

Chop up the fruit into small pieces.

When the meringue has cooled completely, dollop the jam on top of it.

Then cover the meringue with the whipped cream.

Top it with the fruit and sprinkle the remaining Grand Marnier on top.

Cut in wedges and serve immediately!
