This is a cheat recipe for sure – but a great recipe for barbeques and potlucks. Easy and delicious (and even healthy).

Ingredients:
1 lb bacon
1 onion, diced
2 – 348 mL can of your favorite baked beans
1 – 540 mL can of black beans, drained and rinsed
2 chipotle peppers in adobo sauce (finely minced/chopped)
Directions:
Preheat oven to 375 degrees.
On foil lined baking sheet, lay bacon in single layer. Place in oven and bake until crispy. Do not throw oil away. Let bacon cool.



In a large pot, add 4 tablespoons of the bacon grease. On medium heat, add in the onion and saute until fully cooked.


Add in the baked beans, black beans, chipotle peppers and mix with onion. Cook until it gets close to the thickness you like your beans.





Chop up the bacon. Add in the bacon, mix well and serve as a side dish or we like it as a breakfast (cowboy style) dish with toast!
