Peanut Butter Chocolate Rice Krispie Squares

I am not going to lie – these are the best version of rice krispie squares. There used to be a place near my office that made these and I would get them regularly with an extra large cup of coffee… perfect for those days when you need a boost of energy and a deep feeling of bliss…

Ingredients:

½ cup butter

1 – 14 oz bag marshmallows

1 cup peanut butter

8 cups rice krispie cereal

2 cups chocolate chips

1 Tbsp butter

Directions:

Butter a 9 x 13 pan.

In a small bowl, put the chocolate chips and 1 Tbsp butter. Place in microwave for 30 seconds, stir, then put back in microwave for another 15 – 30 seconds. Stir – if it is smooth, set aside. If not, it may need a few more seconds in microwave, but give it short intervals like 5 seconds so it does not burn. Set aside.

In very large pot, on medium low heat, melt ½ cup butter.

Add in peanut butter and marhsmallows and mix continuously until it is completely smooth.

Remove from heat and mix in the rice krispie cereal.

Take half of the cereal and press into the greased pan. Use your hands to press it well into the corners – you should have a layer that covers the bottom.

Take half of the chocolate and spread it evenly on top.

Take the remaining rice krispies and put large spoonfuls all over the chocolate. Take your hands and also press it into a smooth layer.

Take remaining chocolate and evenly spread on top.

Let set for a good two hours. You can put it in the fridge to set faster, but these are harder to eat when cold, so best at room temperature. Enjoy!
