This ginger flavoured dessert is heaven – easy to make, and the flavours – wow! just like Fred and Ginger! Double wow.
Music Selection: Fred Astaire & Ginger Rogers – Heaven

Ingredients:
8 oz cream cheese at room temperature
2 tsp grated lemon zest
10 oz lemon curd
2 cups whipping cream
36 – 40 thin gingersnap cookies
2 Tbsp crystallized ginger, diced finely
Directions:
In large bowl, beat the cream cheese with beaters. Add lemon zest. Beat in lemon curd until smooth.



Gradually, add in the whipping cream and beat until soft peaks.
In an 8 x 8 baking dish, cover the bottom with a layer of gingersnap cookies. I like to break a few to fill in the spaces. Spread about 2/3 cup of the whipped cream on top. Then add another layer of cookies, then whipping cream, until you have a good 4 layers. The top layer should be the whipping cream.



Sprinkle with the crystallized ginger. Place in fridge to cool for at least 2 hours or overnight.



Cut into 12 pieces and serve! Great for afternoon tea or coffee breaks.
