This is my own version of a few of our favorites – shortbread, cheese cake and pralines… I hope you enjoy this easy, delicious, peachy recipe!
Music Selection: Eels – Peach Blossom

Ingredients:
Crust:
1 cup butter, softened
¼ cup brown sugar
½ tsp salt
2 cups flour
Filling:
4 large peaches, peeled and diced finely
2 – 250 g cream cheese
¼ cup sugar
1 tsp vanilla
1 tsp cinnamon
¼ tsp nutmeg
¼ cup cornstarch
Topping:
¼ cup brown sugar
½ cup chopped pecans
1 tsp cinnamon
Directions:



Preheat oven to 350 degrees. Grease a 9 x 13 pan with butter.


In a bowl, with pastry beaters, beat the butter, flour, salt, and brown sugar until crumbly dough. Pour into pan and press firmly. Bake in oven for 20 minutes.







In a large bowl, beat the cream cheese, cornstarch, vanilla, sugar, cinnamon and nutmeg. When well mixed, add in the peaches. Pour over the warm crust.









In a small bowl, mix the topping ingredients and sprinkle over the cream cheese layer. Bake in oven for 45 – 50 minutes. Let cool. Then place in fridge for several hours. This is great for BBQ parties, potlucks and even high noon tea!!
