Herbed Pea Salad

Time: 20 minutes

How sweet is this salad – deliciously sweet… healthy, light, easy to make… perfect side!

3 cups frozen peas, thawed

1 ½ cup shredded cabbage (or coleslaw)

1 green onion, finely diced

2 large radishes, finely cut into match sticks

¼ cup olive oil

¼ cup apple cider vinegar

¼ cup chopped fresh Italian parsley

1 Tbsp finely chopped fresh mint

1 Tbsp finely chopped fresh dill (or 1 tsp dried dill)

1 tsp grated lemon peel



In large bowl, combine all of the ingredients. Salt/pepper to taste.

Serve as a side dish to Steak and rosemary lemon roasted potatoes.
