Rosemary Lemon Roasted Potatoes

Time: 1 hour

The big dilemma when having a bbq – side dishes! These are so easy and delicious to make – they never fail to please!

Music Selection: Fools Garden – Lemon Tree

Ingredients

3 large or 25 mini potatoes

¼ cup olive oil

1 lemon

¼ cup chicken broth

3 cloves garlic, minced

1 – 2 Tbsp of finely chopped fresh rosemary

Salt/pepper

Directions

Preheat oven to 400 degrees. Oil/spray a 9 x 13 pan.

Cut the potatoes – if using minis, cut in half. If using larger potatoes, cut in wedges that are ½ inch thick. Place potatoes in a bowl.

Juice the lemon, removing the seeds.

Mix in the broth, garlic, rosemary, olive oil, lemon juice and salt/pepper.

Pour into pan and let roast for at least 45 minutes. The moisture should be gone and potatoes should be browned.

Serve with sour cream or tzatziki sauce. Serve with Steak or BBQ porkchops and Herbed Pea Salad!
