Peach Pie Pudding

Time: 25 minutes

You will want to linger and enjoy this pudding. It is great as a dessert, but we also like it for breakfast as you can make it the night before! So healthy, delicious and a great way to use up ripe peaches!

Music Selection: The Cranberries – Linger

3 cups milk (any type – cow’s, almond, soy, macadamia, oat) – you may need up to a cup more if you want it less thick

Ingredients:

1 cup chia seeds

1 Tbsp vanilla

2 large peaches, peeled and cut in tiny pieces

1 tsp cinnamon

¼ cup brown sugar or maple syrup

Dash nutmeg

Dash cloves

Greek yogurt or whipped cream for topping

Directions:

In large bowl, mix milk, vanilla, cinnamon, nutmeg, cloves and sugar.

Mix in the pieces of peaches, but keep a few pieces to top the pudding.

Mix in the chia well, so it does not clump.

Using a ladle, pour into pretty, clear glasses or bowls. Let set for 10 – 20 minutes.

Top with yogurt or whipped cream, additional peach pieces and a dash of cinnamon!
