How can I describe this very simple, but extremely flavorful dish – YUM! It will make your day lovely and spicy!

Ingredients:
1 large yam, washed and skin on
2 Tbsp olive oil
3 – 4 Tbsp honey (liquid, heat up if solid)
1/2 tsp chili powder
1/2 tsp smoked paprika
½ tsp cayenne
Salt/pepper
1 lemon or lime, cut into 8 wedges.
Directions:



Preheat oven to 400 degrees.
Line a baking sheet with foil.
Cut the yam in half length – wise. Coat all of the yam (all sides) with the olive oil and place on baking sheet with skin down. Using a sharp knife, score the flesh with a cross pattern.



In small bowl, mix the chili powder, paprika, cayenne and salt/pepper.

Sprinkle the spices over the open part of the yams.

Drizzle 2 Tbsp of the honey on the yams.
Put in the oven and bake for 25 minutes. Then flip the yams over so the spices are down and bake another 20- – 25 minutes, until yam flesh is soft.
Remove the yam from the oven, and flip the yam over gently so skin is down, but spices remain on the yam.


Drizzle remaining honey on the yams, cut into chunks and serve with lemon wedges.


Serve with lemon parmesan baked fish or BBQ chicken or steak.
