Our lovely neighbor, across the street, picked and then gave us about 10 lbs of apples from her tree. They are small apples, that have a thin skin and are so tasty. I made this apple crisp, and didn’t have to peel them. This is a recipe that is timeless … one to love yesterday, today and tomorrow.

Ingredients
8 – 10 apples (about 8 cups of diced apples – you may want to peel them if they have thick skins)
1 tsp cinnamon
¼ cup brown sugar
¼ tsp nutmeg
Dash cloves
Optional – if you do not want it have much liquid, you can add a Tbsp of cornstarch or minute tapioca
Topping:
1 ½ cups quick oats
¼ cup butter, at room temperature
½ tsp cinnamon
3 Tbsp sugar
½ tsp salt
Directions:





Preheat oven to 350 degrees.
In large bowl, mix the peeled and diced apples with cinnamon, brown sugar, nutmeg and cloves. Pour into a large casserole dish (8 cup). In this recipe, I used apples that have a very thin skin, so did not peel them.




In a separate bowl put the oats, cinnamon, sugar and salt. Mix well.


With a fork or pastry cutter, cut the butter into the oats until it is mixed into coarse (pea size) clumps. Pour over the apples evenly.


Bake in oven for 45 – 60 minutes, until apples are soft.
Let cool for a few minutes, then scoop into bowls and serve with vanilla or butterscotch ice cream.
