Student Ramen Fried Rice

Time: 20 minutes

This is a weird recipe, for sure. It makes a little leftovers go a long way, in a comforting way. Delicious, quick, and a great way to use up left over rice, ham and vegetables. This is also a great recipe to make while camping!

Ingredients:

3 cups (71 g) of instant ramen noodles, chicken flavour (mr. noodle is great)

3 eggs

Boiling water

3 cups of cooked rice, that is cooled

1 cup finely chopped ham

1/4 cup frozen peas

1/4 cup frozen corn

Chopped green onion for garnish

Directions:

Empty the 3 cups of ramen noodles into a Ziploc bag and break up into small pieces. Put the noodles back into the cups. Add in the seasoning. Pour boiling water just to cover the noodles. Let sit.

In skillet, heat some oil.

In small bowl, beat the eggs. Salt/pepper. Scramble the eggs in the oil. Remove the eggs.

Add more oil to the hot pan. Add in the rice and let fry. Do not over mix or it will get mushy. When it is all hot, and some are browning, add in the ham, peas and corn. Mix and let cook, but do not over mix.

Add in the cooked ramen noodles. Stir to blend, but do not over mix. Let all the liquid cook out.

Add in the eggs and blend.

Serve, topped with some green onion.

This is great with Char Siu pork.
