Mushroom soup is so simple to make and delicious, comforting food. You will fall in love (again) with this dish – over and over!

Ingredients
¼ cup butter
Salt/pepper
1 leek, chopped finely
3 Tbsp flour
6 sprigs fresh thyme
2 cloves garlic, minced
4 cups chicken or vegetable broth
½ cup sherry
6 cups sliced mushrooms
1 cup heavy cream
Directions:
In large pot, melt butter.

Take 4 cups of the sliced mushrooms and saute until soft. Add in leeks and garlic – and saute until soft.








While sauteeing the mushrooms, take the remaining mushrooms and chop finely. Add to pot and allow to cook.




Add in the sherry and saute for a few minutes then add the broth and thyme. Bring to a boil. Then simmer for 45 minutes.



Take the cream and whisk in the flour, until smooth. Slowly add to the soup to allow it thicken. Remove thyme stalks.





Serve with garlic toast!
