Breakfast Egg Muffin

Time: 30 minutes

How do you like your eggs in the morning? We like ours a little soft (runny) on top of pretty much anything. We make this dish for breakfast, brunch, lunch, and sometimes even supper!

Music Selection: How D’Ya Like Your Eggs in the Morning (Rich, Young & Pretty – 1953)

Ingredients:

4 english muffins, biscuits or brioche buns – toasted

Butter

4 eggs

4 pork sausage patties (fried or baked)

4 slices cheddar cheese (or processed)

Directions:

Heat oven to 375 degrees. Place patties on a tray and baked until thoroughly cooked – about 20 minutes.

Cut the muffins in half and toast the muffins and butter them.

In a small skillet, put some butter/oil and fry eggs so they are still soft. Salt/pepper.

To make the muffins, place a sausage, egg and slice of cheese. Then top with other muffin half. Enjoy with coffee.
