Ingredients:
2 large potatoes, peeled and grated
1 cup cooked macaroni (omit if you want a gluten-free version and add another potato instead)
1 tsp smoked paprika
1 tsp dried thyme, oregano or dill
½ cup cooked ham, finely diced
2 slices of ham (cut in half into 4 pieces)
3 oz cheese (smoked gouda, dill Havarti, provolone) thinly sliced
4 eggs
Salt/pepper
½ cup butter
Directions:
Peel and grate the potatoes. With your hands, wring out as much of the moisture out of the potatoes.



Put potatoes in a large bowl with the macaroni.

Add in the paprika, thyme, and diced ham. Salt/pepper. Mix well.




In large skillet, melt the butter on medium-high heat.

Add in all of the potato mix to coat all of it in butter. With a spatula or spoon, split the potatoes into 4 equal sized circles. Do not squash down the potatoes. Let it fry for at least 12 minutes until the bottoms are very browned.



Gently flip each one over, trying not to break them. Let cook for another 4 – 5 minutes, until getting brown. Place slices of cheese on top and then with large cover, cover the skillet and let cook another 5 minutes until browned on bottom and cheese has melted.





In meantime, in another skillet, put a little oil or butter and fry up the 4 eggs (over easy or sunny side up – leave them a little soft). Remove from pan.


In same pan as eggs, heat up the ham. Flip.

To ensemble, place a roti on the plate. Place ham on top and then an egg! Enjoy.
