Dijon Baked Salmon

Time: 25 minutes

Supper in 25 minutes… you really can pull off a delicious, healthy meal in a snap that your family will love.

Music Selection: Celtic Heart – “Kid ar an Sliabh” – feat. Harp Twins & Mairead Nesbitt

Ingredients:

1 side of salmon (3 – 4 lbs), skin off

3 Tbsp brown sugar

1 tsp smoked paprika

1 Tbsp dried dill

1 tsp garlic powder

½ tsp cayenne pepper

Salt/pepper

¼ cup dried parsley

¼ cup butter, melted

¼ cup Dijon mustard

Directions:

Preheat oven to 425 degrees.

Line a cookie tray with foil.

In a bowl mix the brown sugar, paprika, dill, garlic, cayenne, salt/pepper and parsley.

Cut the salmon into half or quarters. Slather the Dijon evenly on the salmon.

Sprinkle the seasonings on top evenly. Then pour the melted butter on top.

Bake in the oven for about 12 minutes and then check to see if any of the thinner sections are done. The thicker pieces will take about 15 minutes in total, if you like it medium rare.

Enjoy with a side fennel orange salad.
