You will never find a tastier pulled pork recipe that can be made so quickly – one dish!

Ingredients:
4 lb bone in pork shoulder or boneless pork butt
2 red apples
2 tsp garlic powder
2 tsp onion powder
2 tsp smoked paprika
1 tsp cumin
½ tsp cayenne pepper
1 cup loose brown sugar
¼ cup apple cider vinegar
½ cup whiskey or bourbon
1 package bacon
BBQ sauce (I like peach flavored)
8 brioche buns
8 cheese slices (cheddar, Monterey jack, Havarti, etc)
Toppings: coleslaw – try apple fennel coleslaw, mustard, pickled jalapenos
Directions:
In large instant pot, put the pork (remove skin and excess fat) with bone in (if not using bone, cut it into 6 pieces).



Peel and core apples and cut into slices. Put in the instant pot.


Add the spices and the cider vinegar and whiskey.



Turn instant pot to high and turn on for 90 minutes. Then release. If using small chunks, it likely is ready to shred with two forks. If using a bone-in piece, remove the meat, and remove the bone and put the meat in chunks back in the instant pot. Turn back on high for 30 minutes. Then release and shred with two forks.


While pork cooks, turn oven to 375 degrees.
Line a baking sheet with foil. Lay bacon single layers and bake until crispy – about 20 minutes. Let cool, then dice.





When pork is done, and shred, turn on sear/simmer to remove excess liquid. If in a hurry, you can drain the meat and put back in the pot. Mix in the chopped bacon.

To make your pulled pork sandwich, cut your bun in half. Then put mustard (if you like it). Top with pulled pork, bbq sauce, a slice of cheese, coleslaw / apple fennel coleslaw and/or pickled jalapenos.
