4 – 6 medium potatoes
2 cups milk
¼ cup flour
¾ c. butter, split in 3 x ¼ c
1 tsp smoked paprika
½ tsp ground mustard
½ tsp dried onion powder
½ tsp garlic powder
1 leek, finely diced
2 cups shredded old cheddar
2 cups finely chopped fresh broccoli
Preheat oven to 350 degrees.
Cut potatoes in half and put a little butter in between split halves. Wrap tightly in foil. Repeat for each potato. Place on baking sheet and bake until done (30 mins for smaller potatoes, up to an hour for larger potatoes).
In medium sauce pan, melt ¼ c. butter. Add finely diced leek and finely chopped broccoli. Saute until soft. Add spices and mix well.
Add remaining butter and as it melts, mix in the flour, so it is a lump-free roux.
With a whisk, mix in the milk and bring to a boil. It will thicken. Add in the cheese and mix well.
When potatoes are done, unfoil and top with the broccoli cheese sauce.
