Quick Pickled Red Onion

Time: 1 hour

Why wait for the world to change? You can change up many of your favorite recipes with this simple pickled red onion recipe – great way to get a few extra vegetables in!

Ingredients:

½ large red onion, shaved slices

½ cup water

¼ cup white vinegar

¼ cup cider vinegar

2 Tbsp sugar

1 ½ tsp salt

Dash of red pepper

Directions:

Slice the red onion as finely as you can.

In bowl, mix the water, vinegars, sugar, salt and red pepper. Mix well to dissolve.

Add in the shaved onion. Cover and refrigerate for an hour or more.

Serve with tacos, burritos, enchiladas, nachos, ramen soup (crispy pork ramen, chicken ramen), bibimbap or fish burgers.
