Aji Verde

Time: 15 minutes

And another great side dish to lead a fun and spicy weekend with great weather and BBQing and celebrating!

1 cup mayonnaise

2 cups packed cilantro (washed, and torn up)

1 jalapeno (more or less to taste), remove seeds and dice

3 cloves garlic, minced

Juice from two small limes (2 Tbsp)

¼ finely chopped red onion

Salt/pepper to taste


In a blender that can finely  blend, add the mayonnaise, cilantro, chopped jalapeno, garlic, lime juice, red onion.

Blend until very finely chopped and like a sauce.

Put in a bowl and salt/pepper to taste.

This can be served as a side for so many dishes – steak, coconut curry rice, pork, on hamburgers, Quinoa salad, pork burgers, lamb burgers, etc.
