Buttery Cinnamon Apple Muffins

Time: 30 minutes

1 cup salted butter, melted

1/4 tsp salt

1 cup sugar

2 eggs

2 cups flour

1 tsp vanilla

2 tsp baking powder

1 tsp cinnamon

Dash of cardamom

1 cup milk

2 apples, peeled and cored


4 Tbsp sugar

2 tsp cinnamon


Preheat oven to 400 degrees. Place muffin liners in muffin tins.

In small bowl, mix sugar and cinnamon for topping. Set aside.

In large bowl, add sugar, flour, salt, baking powder and cinnamon. Mix well.

In a small bowl, mix the eggs, vanilla and milk with a whisk. Set aside.

Take the two apples and use ½ the apple to make thin long slices of apple – you want to get 24 thin slices. Take remaining apple and dice it into tiny pieces.

In flour bowl, slowly whisk in the milk/egg mixture and melted butter. Mix well. Add in the diced apples and mix well.

With two spoons, equally fill the muffin liners/tin to make 12 muffins.

Take the long slices of apple and coat in the sugar/cinnamon topping. Place two slices of apple on top pushing the thin side into the apple. Do this for all 12.

Sprinkle remaining topping on all the muffins.

Place in oven and bake for 18 – 20 minutes. Let cool and enjoy!
