Roasted Acorn Squash

Time: 30 minutes

Baby – this is what you came for… a quick, healthy side dish that goes well with almost any entree.

2 acorn squash

¼ cup olive oil



Toppings: chilli powder, butter/brown sugar, butter and cooked peas


Preheat oven to 400 degrees.

Line a cookie sheet with  foil or parchment paper.

Cut the acorn squash in halves. Scoop out seeds.

Brush the insides of the acorn squash generously with the oil. Lightly salt.

Flip insides of acorn squash down on to the pan. Bake in oven for 20 – 25 minutes, depending on how soft you like the squash.

Remove from oven and invert. Cut into ¼ or 1/3s.

Top with a little butter and brown sugar or instead sprinkle a little chilli powder on top. You can also add a little butter and lightly cooked peas to add even more color. This goes well with BBQ salmon!
