Peach & Blackberry Cake with Cream Cheese Frosting

Come a Little Closer and you’ll see this is an amazing and easy dessert to make. Great for brunch, high-noon tea or just as a dessert.

Cake Ingredients:

2 cups flour

¾ cup sugar

1 Tbsp baking powder

½ tsp salt

2 eggs

½ tsp almond extract

1 tsp cinnamon

1 cup cream or milk

¼ cup melted butter

6 oz container of blackberries, cut in halves

1 large peach, peeled, cored and cut into chunks

Frosting Ingredients:

8 oz cream cheese at room temperature

¼ cup butter

½ tsp almond extract

3 – 4 cups icing sugar

Directions:

Preheat oven to 375 degrees. Spray a 9 x 13 pan with oil or brush well with butter.

In large bowl, mix the flour, sugar, baking powder, cinnamon and salt.

In a separate bowl, whisk the cream and eggs. Add in the melted butter and almond extract. Mix well.

Combine the dry and wet ingredients. Mix well and pour into prepared pan. Ensure it is evenly spread.

Take the peaches and blackberries and one by one push them into the batter so it is evenly spread and the fruit is mixed.

Bake in oven for 42-45 minutes. Let cool completely.

With electric beaters, beat the cream cheese and butter until very smooth.

With the beaters on low, add the icing sugar one cup at a time, ensuring it is well mixed before adding the next cup. Add enough sugar so icing is thick, but spreadable. Add in the almond extract and beat so it is evenly mixed in.

Spread the icing evenly over the cake. This is great with high-noon tea or a hot cup of coffee.
