So easy to make – true comfort food. These can be made in batches and frozen and always on hand!

Ingredients:
10 large red potatoes, peeled and cubed
6 eggs
Salt
Nutmeg
½ cup cream cheese, room temperature
1 ½ cups panko bread crumbs
½ tsp smoked paprika
Butter
Directions:
In large pot of salted water, add potatoes and boil until soft (15 – 20 minutes). Drain.




To warm potatoes, add cream cheese, nutmeg and salt. With a potato masher, mash the potatoes until very smooth. Break and separate 3 eggs. Add the yolks to the potatoes and blend well.





Line a cookie sheet with parchment paper.
Take ¼ of the potatoes when cooled and roll into a log about 1 inch diameter and 7 inches long. Place on parchment paper. Do the same for the remaining. Place in freezer for 30 minutes.

Take egg whites and add three eggs to bowl. Beat well and set aside.
In another shallow bowl or plate mix the panko bread crumbs, some salt and paprika. Mix well.





In large frying pan, place some butter (2 Tbsp at a time).

Take the frozen croquette logs and cut each log into about 2 inch pieces. Roll each piece in egg wash and then the breadcrumbs. Fry a single layer of croquettes in the butter, but let it brown before gently rolling it to brown until whole croquette is brown.




Serve with pork or chicken schnitzel with dill or mushroom sauce. These are great served with sour cream.
