Gingerbread Cake with Orange Rum Sauce

Ingredients:

Cake:

1 Tbsp oil

1 Tbsp flour

½ cup brown sugar

½ cup butter, room temperature

¾ cup molasses

2 cups flour

1 ½ tsp baking soda

1 tsp cinnamon

½ tsp ground cloves

½ tsp ground nutmeg

½ tsp salt

1 tsp ground ginger

1 ripe banana, mashed

¾ cup boiling water

Icing:

½ cup butter

½ cup sugar

¾ cup whipping cream

2 Tbsp orange juice

1 Tbsp orange zest

Whipped Cream:

1 cup heavy cream

2 Tbsp sugar

1 tsp vanilla

Directions:

Preheat oven to 350 degrees.

Grease pan with 1 Tbsp oil and then flour it with 1 Tbsp flour. Set aside.

In large bowl, beat the butter and sugar with electric beater. Add in egg and beat for 1 minute.

Add mashed banana, cinnamon, cloves, nutmeg, ginger and salt. Beat.

Beat in the molasses and hot water. Slowly beat in the flour until well mixed.

Pour into grease and floured pan. Bake for 30 – 35 minutes.

Let cool.

To make the sauce, put all ingredients in a saucepan on medium heat. Bring to a boil and let boil until a bit thickened. Let cool.

In separate bowl, beat the whipping cream, sugar and vanilla until thick.

Serve cake with whipped cream and sauce.
