Music Selection: Alison Krauss – When You Say Nothing At All

Ingredients:

6 cups chicken broth

6 Tbsp butter

1 large onion, finely diced

2 tsp turmeric

1 tsp cumin

3 cups couscous

Optional: 1 – 2 cups green peas

Directions:

In large saucepan, saute the onions in the butter until soft.

Add the broth and bring to boil. Add the turmeric and cumin.

Remove from heat and whisk in the couscous (and peas if you are adding them). Cover and let sit about 12 – 15 minutes.

Fluff and serve with chicken tagine or spicy basa fish and glazed carrots.
