Time: 25 minutes
Music Selection: Paramore – C’est Comme Ca

Ingredients:
1 cup basmati rice
10 oz can of coconut milk
Water
1 lime, zested
1 Tbsp sugar
Salt
Fresh mint
Directions:
In a measuring cup, pour the coconut milk. Add water until it reaches 2 cups. Pour into a pot.

Rinse the rice and add to the pot, along with the salt, sugar and lime zest. Bring to a boil, then lower heat and cover for 15 minutes.




Remove from heat and fluff with a fork.
Finely chop the mint and mix in. Serve with peri peri chicken.
