Chicken fettuccini alfredo (keto friendly)

Serves 6

If you love pasta, you will love this dish. It is quick to make and makes a lot, but you will have none left… enjoy!

Ingredients:

750 g of fettuccini noodles

5 large chicken breasts, cut into 1 inch cubes

4 Tbsp butter

3 cloves garlic, minced

3 cups heavy cream

1 cup grated fresh parmesan cheese

¼ tsp ground nutmeg

Salt/pepper

Olive oil

Directions:

In large pot of boiling, salted water, add fettuccini noodles and cook according to directions. Then drain and put in large bowl, with a sprinkle of olive oil to keep noodles from sticking.

While noodles are cooking, in large saucepan, add the butter and saute the chicken and garlic until the chicken is getting browned.

Add in the heavy cream and nutmeg and when the edges are starting to bubble, add in the parmesan cheese. Mix well, so that the sauce stays smooth.

Pour over the noodles, mix well and serve with extra parmesan and fresh parsley!
