Home made mac and cheese topped with Cheezies… life is good. This definitely is soul food… we started making this as a side dish at our barbeque parties, but it soon became a favorite side dish… and a breakfast dish, with a bit of added bacon and a runny egg on top (or beside)! This is also a great dish to take for a potluck! I would suggest making extra, so you have leftovers, but no matter how much you make… it will get consumed! We have had so many requests for this recipe, I thought it would be a great next post. Plus, I really was in the mood for some Fleetwood Mac (and Cheese).
1 pound (3 cups) uncooked elbow macaroni
2 Tbsp butter
2 cups cream or milk
8 oz (225 g) Velveeta cheese, cut into small cubes
4 cups grated cheese (we like to use a mix of Monterey jack, cheddar, Swiss cheese, or Havarti)
1 tsp salt
½ tsp pepper
1 Tbsp ground mustard
1 tsp paprika (we like smoked paprika)
1 tsp garlic powder
1 tsp onion powder
1 bag of Hawkins cheezies (210g) – if you can’t find cheezies, as they are a Canadian product, you can use cheesy doritos or cheese crunchies
Optional: 6 slices of bacon, chopped and fried crisp into bacon bits.
In food processor, grind cheezies into bread crumb size and set aside.
Butter a large casserole pan. In large pot, boil water and cook macaroni according to directions – about 8 minutes. Drain macaroni.
While macaroni is boiling, in another pot, melt butter. Add milk and start to simmer. Add in Velveeta cheese, salt, pepper, ground mustard, paprika, garlic and onion. Whisk until Velveeta is melted and smooth. Add in 3cups of the grated cheese, and reserve 1 cup of cheese. Mix well until cheese is melted.
Once macaroni is drained, pour into the buttered casserole pan. Then pour the cheese sauce over the macaroni and mix so the noodles are covered. If adding the crispy fried bacon pieces, you can mix them into the noodles at this point or use them as a garnish.
Sprinkle the remaining one cup of cheese on top. Then sprinkle the ground cheezies on top. Put casserole in oven and broil for about 1 -2 minutes (watch it very closely) until the cheezies just lightly brown. Serve immediately!!!
