Music Selection: Bryan Adams & Luciano Pavarotti – O Sole Mio
This is a quick cake that is so cool as the layers reverse during baking! Magic, just like love! This cake is great as it is not too sweet, easy to make and delicious, if you love chocolate and vanilla. I like pairing it with ‘O Sole Mio’ as I love the contrast of the voices of rock star, Bryan Adams, and opera singer, Luciano Pavarotti — just like the contrast of chocolate and vanilla in the cake!

Ingredients:
1 package chocolate cake mix (and ingredients for cake mix –usually, eggs, water and oil)
2 x 16 oz containers ricotta cheese
4 eggs
¾ cup sugar
1 tsp vanilla
1 package instant chocolate pudding mix
1 cup cold milk
1 cup whipping cream
2 Tbsp sugar
Directions:
Preheat oven to 350 deg F. Spray a 9 x 13 inch pan with non-stick spray.
In large bowl, mix the chocolate cake mix, according to the instructions. Pour into the greased pan.

In a separate bowl, beat the ricotta cheese, eggs, sugar and vanilla. Gently pour this over the chocolate cake mix. Please note – this is the correct layering, as during baking time, the layers will reverse! Bake for one hour. Then let cool completely.
In meantime, in a separate bowl, mix the whipping cream and sugar until thick.
In fourth bowl, mix the chocolate pudding and milk for 2 minutes. Then fold in the whipped cream. When cake is cooled, top with the chocolate whipped cream. Cover the cake and refrigerate for several hours. Serve with hugs and love!
