Perogies for Breakfast – savoury or sweet?

This blog’s purpose is to come up with interesting food, but to also come up with interesting, fun breakfasts that are healthier than a bowl of sugary cereal or instant oatmeal. Hence, this morning, we are trying both savoury and sweet perogies – which we usually eat for lunch or supper. A breakfast hit (5 out of 5 like them) in our house – a bit of surprise – kind of like this youtube video… I hope your perogies help you look at the bright side of life today!

Ingredients:

1 bag of potato/cheese; cottage cheese; or sauerkraut perogies (frozen) – “savoury perogies”

1 bag of fruit (strawberry, blueberry, etc) perogies (frozen) – “sweet perogies”

½ cup butter

(optional) 2 Tbsp brown sugar

1 cup sour cream

1 cup vanilla (or a fruit flavoured or coconut) greek yogurt

(optional) fruit flavored syrup, like raspberry, pear, peach, blueberry, etc

1 cup crispy fried bacon bits

Directions:

In two large pots, filled with water and a Tbsp of salt in each, bring water to boil. When water is rapidly boiling in each pot, add the savoury perogies to one pot and the sweet perogies to the other.

Boil according to directions, but a good rule of thumb is boil them and gently stir them until they start to all float. When they float, then boil for another 3 minutes.

Drain the perogies separately. Put the savoury perogies in one large bowl and the sweet perogies in a separate bowl. Put ¼ cup of butter on each and gently toss. The butter will keep them from sticking.

Serve the savoury perogies with sour cream and bacon bits.

Serve the sweet perogies with brown sugar, Greek yogurt, and fruit syrup.

As side dishes, serve with a boiled egg and some fresh fruit, like cantaloupe!

    I had never heard of fruit perogies until moving to Edmonton, Alberta, where is there a large Ukrainian population. Here though, fruit perogies are served as you would the savoury, with bacons, onions and sour cream.
    I’ve never had them but my son has and he said they were delicious.
    I really like the idea of them served with yogurt for breakfast! I might even try that.
