Time: 30 minutes
This is the easiest way to make something similar to braised cabbage. I like this recipe as it is done in the oven and is quick to make yet very flavourful… great side to so many dishes.

Ingredients:
1 medium head of red cabbage
¼ cup olive oil
Salt/pepper
Vinaigrette:
¼ cup olive oil
1 Tbsp Dijon mustard
1 Tbsp whole-grain mustard
1 Tbsp maple syrup
1 Tbsp apple cider vinegar
1 tsp soy sauce
Directions:
Heat oven to 450 degrees.
Line a cookie sheet with foil.
Finely chop the cabbage. Place on cookie sheet. Sprinkle with the oil, salt/pepper and bake in oven for 25 minutes (take it out before it starts to get crispy, but a little brown is good).



Let cool for 5 minutes then place in serving bowl.
In small bowl, whisk together all the vinaigrette ingredients. Pour over the warm cabbage and serve immediately.



It goes well with pork, apple and sage stew, herbes de provence pork stew and also pork schnitzel.
