Grilled Radicchio Bundles – Two Ways!

Time: 30 minutes

These little magical bundles are soooo delicious and easy to make. I like that you can serve them two ways with little extra effort, too. Great for keto dieters.

Music Selection: Coldplay – Magic


1 medium head of radicchio

1 ball fresh mozzarella

½ cup pesto

Option 1: 3 Tbsp olive oil and 3 Tbsp balsamic vinegar

Option 2: 10 – 12 slices of prosciutto


About 2 hours before you want to make these, peel the leaves of the radicchio apart. Place in large bowl with salted cold water and change the water once or twice to allow some of the bitter flavor of the radicchio to reduce.

Preheat BBQ to 375 degrees.

Take ball of mozzarella and cut it into ½ inch cubes.

Option 1: Coat each cheese cube in pesto and then roll it in a leaf of radicchio. Use a toothpick to hold it together. Mix the vinegar and oil then brush these with the mix of olive oil and balsamic vinegar. Grill until soft and enjoy!

Option 2: Coat each cheese cube in pesto, then roll it in a leaf of radicchio. Then wrap a slice of prosciutto around the radicchio and pin together with a toothpick. Grill until the radicchio is soft and prosciutto a bit crispy. Enjoy!
