“Blessed” IP Pancit

Time: 1 hour

This is a crazy simple, one pot recipe that is so tasty AND healthy!! You will know you are blessed on those super busy days when you make this meal and — relax. Enjoy.

Ingredients:

4 chicken thighs, skinless & boneless

½ lb pork loin, cut in large cubes

3 cloves garlic, finely chopped

1 small onion, finely chopped

½ of napa cabbage, finely chopped

½ red pepper, finely sliced into matchstick

1 carrot, finely sliced into matchstick

2 green onions, finely sliced

¼ cup finely sliced snap peas or snow peas (julienned)

8 oz pack of rick vermicelli noodles

1 celery stock, finely sliced

2 ½ cups chicken stock

1 bouillon cube (or 1 Tbsp chicken bouillon)

¼ cup soy sauce

2 Tbsp oyster sauce

Directions:

In large instant pot, on sear, stir fry the onion, garlic, carrot, celery, red pepper and cabbage until lightly cooked. Remove from pot and turn pot off momentarily.

In empty pot, add the chicken stock, bouillon, soy sauce, oyster sauce, chicken and pork. Turn the instant pot to pressure cooker – high for 45 minutes. After 45 minutes, release. Turn pot back to sear.

Carefully (you may want to turn pot off for this part or wear kitchen / oven gloves), take two forks and shred the chicken and pork.

Add in the noodles (pot should be on sear), and mix for 3 -5 minutes until the noodles are cooked. You may need to add a little liquid, if it gets dry – either water or more chicken broth.  Turn heat off once noodles are cooked.

Place noodles and meat in large bowl. Add the sauteed vegetables. Sprinkle the green onion and snap/snow peas on top. Serve immediately! A great dish to serve this with is Filipino BBQ pork skewers!
