Music Selection: Meatloaf – Two Out of Three Ain’t Bad
This meatloaf is my mom’s recipe, originally. Over the years, I have modified it a bit. My hubby LOVES this meatloaf recipe. He likes me to make a big loaf so he has leftovers to make a “meatloaf sandwich” the next day. My kids – well 2 of the 3 love meatloaf… one is not a meatloaf fan… “two out of three ain’t bad”… just sayin’ – it is really good (4/5 of our family love it), you should try it!

Meatloaf Ingredients
1 ½ lbs ground beef
2 Tbsp HP sauce (you can use AI steak sauce or Heinz Chili sauce)
1 cup panko breadcrumbs
2 eggs
3 Tbsp fresh or dried parsley, chopped fine
1 clove garlic, minced
½ tsp smoked paprika
½ cup onion, diced finely
Salt/pepper
Sauce Ingredients
1 (10 oz) can Aylmer tomato soup
2 Tbsp mustard
1 Tbsp HP sauce
1 Tbsp brown sugar
½ cup water
Directions
Pre-heat oven to 400 deg F.
In large mixing bowl, mix all of the meatloaf ingredients together well. In a loaf pan, form the meatloaf into a loaf shape, but leave a good ½ cm between the meatloaf and the edges of the pan.
In a small bowl, mix all of the sauce ingredients together, until smooth.
Pour over the meatloaf. Bake in an oven, uncovered for 60 minutes.
Serve with mashed potatoes & gravy OR try potato noodles with turkey gravy. Also serve with creamed cabbage.
